La Segunda Bakery Pastry Baker Job Description

La Segunda Bakery & Café is in search of a Head Pastry Baker to manage the Pastry Department. The ideal candidate will have minimum of 5 years of experience in pastry or baking. You will prep, bake off and finish a wide variety of handmade pastries. Ability to work well alone and as a team is a must. This position involves production and decorating. Candidate is expected to produce a high volume of baked goods for multiple locations.


  • Manage schedules and make sure all shifts and production are covered
  • Bake off pastry, per production sheet
  • Follow recipes per company standard
  • Mix, prepare and finish pastry per production sheet
  • Safely operate mixers, cookie machine, and sheeter
  • Come to work with clean, neat appearance and in uniform
  • Fill out operations book where necessary
  • Abide by the health department requirements and maintain a clean work area
  • Oversee a department of about 10 employees
  • Oversee pastry cases as it pertains to production quantity, quality and cleanliness
  • Maintain La Segunda’s high standards for product freshness and sanitation, while abiding by the health department requirements
  • Communicate with pastry team to make sure showcases are properly stocked by opening
  • Oversee the pastry department- cookies, pastries, cakes and bread
  • Make sure all pastries are properly labeled with clean neat appearance
  • Train all new and current employees in the pastry department
  • Ensure pastries are fresh and thrown out if past due date
  • Maintain a positive attitude of oneself and entire staff
  • Coach and develop all direct reports always encouraging teamwork
  • Properly staff and schedule pastry personnel and communicate back to GM
  • Make sure all orders are received in pastry and filled to standard prior to pick up time. Coordinate orders with management and catering team
  • Able to understand and follow written or verbal instructions


  • 5 years minimum experience in Pastry or Baking and Management
  • Able to understand and follow instructions
  • Food preparation experience
  • Able to work well with others but also self-motivated
  • Able to stand for long periods of time and work near ovens
  • Must be able to work any time of the day, we are 24/7/365
  • Ability to clearly communicate company culture, purpose, and initiatives.
  • Microsoft Office Experience and intermediate data entry skills.
  • Responsible for hiring, firing, scheduling all shifts and ordering supplies and ingredients weekly.
  • Attend mandatory manager meetings alongside the Retail department on weekly. Involved in all pastry concepts and layouts for the future and responsible for all products.
  • Designate a Pastry Leader/Supervisor for all locations to have a direct report of the department weekly and train.

Pay Frequency:

  • Weekly pay on Wednesdays
